Fatty Acid Profiling of South African A2 Beef from the Same Feeding Regime through Fat Colour

Background: The onset of an industrial shift from grass to grain-supplemented feed has resulted in a rapid change human diets, specifically the ratio n-6 n-3 fatty acids; where saturated fats and acid consumption increased at expense acids. Although recent reports on global nutrition put emphasis health-related acids, profiling fat acids different breeds reared by farmers within same feeding regime is not efficient. Methods: Fat colour-related proximate fractions (total extractable intramuscular fat, Fat-Free Dry matter Moisture content) profiles Bonsmara, Beefmaster, Brangus, Hereford Simbra A2 steers feedlot systems were evaluated. Result: Breed affected pentadecyclic, total (SFA) docosahexanoic. had high pentadecyclic SFA content while docosahexanoic content. Differences SFA, monounsaturated polyunsaturated n-6, n-3, ratios desaturase index observed between white, creamy-white creamy carcass colours. This study shown that breed synthetic pathways ingredients which cause differences composition beef animals feedlot-based production can be reflected through colour.
